CARROT
CRUNCHIES
1/2 cups flour
1 cup finely shredded carrot
1/2 cup rolled oats
1 tbs honey
1 cup applesauce
1/2 tsp. ginger milk
Preheat oven to 325 degrees.
Add carrot, applesauce, honey, and
ginger. Blend well. Add rolled oats and flour, 1/2 cup
at a time. Dough should become quite stiff. (If dough
is too soft, add a little flour. If dough is too stiff, add
more applesauce.) On a floured board, pat out to about
1/4" thick. Cut out with small cookie cutters.
Place on ungreased cookie sheet. Brush to tops with
milk. Bake for 50 minutes. Turn the oven off but leave the
cookies inside to get crunchy. Take out cookies when oven is
cool. Store in an airtight container.
